Ingredients
- Halloumi80 g
Four slices. Six is a different number.
- Red pepper80 g
- Yellow pepper70 g
- Red onion60 g
- Romaine lettuce100 g
- Avocado40 g
Flesh only. Half a medium avocado is about 70 g.
- Olive oil6 g
- Lime juiceJuice of a lime
- Smoked paprikaA teaspoon
- Ground cuminHalf a teaspoon
- Fresh corianderA handful
Method
Cut the peppers and onion into strips and cook them in the oil over high heat for six to eight minutes, until charred at the edges. Add the paprika and cumin for the last minute.
Push the vegetables to one side and lay the halloumi slices in the empty half of the pan for two minutes a side, so they pick up the spice left behind.
Toss the romaine with the lime and a pinch of salt.
Pile the peppers and halloumi over the leaves and finish with the diced avocado and coriander.
Worth knowing
- One pan, and the halloumi goes in after the peppers on purpose. The spiced oil left in the pan is the seasoning.
- Halloumi is 320 kcal per 100 g and 80 g is a portion. The salad is built to have exactly that much cheese in it.
