Ingredients
- Black beans, tinned and drained150 g
Drained weight.
- Cooked quinoa120 g
Cooked weight. Dry quinoa roughly triples.
- Avocado50 g
Flesh only. Half a medium avocado is about 70 g.
- Cherry tomatoes100 g
- Red onion30 g
- Pickled jalapeños20 g
- Olive oil6 g
- Lime juiceJuice of a lime
- Ground cuminHalf a teaspoon
- Fresh corianderA big handful, chopped
Method
Cook the quinoa according to the packet and cool it, or use a pouch.
Whisk the oil, lime, cumin and a pinch of salt in the bottom of the bowl.
Add the beans, quinoa, halved tomatoes, sliced onion and chopped jalapeños and toss.
Dice the avocado and lay it on top with the coriander rather than mixing it through.
Worth knowing
- The 18 g of protein is beans and quinoa with nothing from an animal. Add 150 g of cooked chicken and it becomes a bigger lunch by around 180 kcal.
- Avocado goes on last and is not tossed, or it smears across everything and browns.
