  • Lean beef, trimmed, in thin strips150 g

    Weighed raw. The same piece weighed after cooking has lost water, so the protein per gram is higher and the total would come out about a quarter over.

  • Little gem lettuce100 g

    Two heads, leaves separated and kept whole as cups.

  • Red pepper80 g
  • Avocado30 g

    Flesh only. Half a medium avocado is about 70 g.

  • Chipotle paste2 tsp (12 g)
  • Spring onion20 g
  • Olive oil4 g
  • Lime juiceJuice of a lime
  • Fresh corianderA handful

Method

  1. Toss the beef with the chipotle paste and a pinch of salt.

  2. Heat the oil in a pan until smoking. Fry the sliced pepper for two minutes, then push it aside and add the beef in one layer. Leave for a minute, then toss for another minute until just cooked.

  3. Squeeze half the lime over the pan. Spoon the beef and pepper into the lettuce cups with sliced avocado, spring onion, coriander and the rest of the lime.

Worth knowing

  • At 10 g of carbohydrate this is one of the lightest dinners in the collection. Two corn tortillas in place of the lettuce make it a taco plate for 130 kcal more.
  • Chipotle paste is smoky as much as hot. Two teaspoons is medium; check the jar, they vary.
