    Dry weight, before popping. Popped in a pan with no oil.

  • Coconut oil1 tsp, about 4 g
  • Maple syrup1 tsp, about 7 g
  • Cocoa powder1 tsp, about 3 g
  • Ground cinnamonHalf a tsp
  • SaltA pinch

Method

  1. Melt the coconut oil in a large lidded pan over medium-high heat, add the kernels, cover and shake until the popping slows to a stop, about three minutes.

  2. Mix the cocoa, cinnamon and salt in a cup.

  3. Drizzle the maple syrup over the hot popcorn and toss, then sift the cocoa mix over and toss again until it is evenly dusted.

Worth knowing

  • The maple goes on first so the cocoa has something to stick to. Without it the powder ends up in the bottom of the bowl.
  • A teaspoon each of maple syrup and cocoa: 19 kcal and 10. The sweetness is mostly suggestion, which is the idea.
