Ingredients

  • Gluten-free oats100 g

    Dry weight. Certified, which is the only thing that separates them from ordinary oats in the numbers.

  • Pea protein powder2 scoops, about 60 g
  • Mixed seeds40 g
  • Raisins40 g
  • Banana1 medium, about 100 g

    As ripe as you can find. A green banana will not mash and will not bind. Peeled weight. A medium banana is about 100 g without the skin.

  • Maple syrup3 tsp, about 21 g
  • WaterAbout 4 tbsp
  • SaltA pinch

Method

  1. Heat the oven to 180°C and line a 450 g loaf tin with baking paper.

  2. Mash the banana thoroughly in a bowl and stir in the maple syrup and four tablespoons of water.

  3. Add the oats, pea protein, seeds, raisins and salt and stir until it is a thick, wet dough. If it will not come together, add another tablespoon of water.

  4. Press into the tin, smooth the top and bake for twenty minutes until the edges brown and the top is set.

  5. Cool fully in the tin before cutting into six. Warm, they crumble.

Worth knowing

  • Pea protein bakes drier than whey and takes more liquid, so the banana and the water are both there. The bar is dense and chewy rather than cakey.
  • Mixed seeds usually contain sesame, so it is flagged. Pumpkin seeds on their own avoid it.
