Ingredients

  • Firm tofu150 g

    Weighed after pressing. Silken tofu is about half the calories and protein.

  • Cornflour1 tbsp (8 g)
  • Tamari2 tsp (10 g)
  • Sriracha1 tsp (6 g)
  • Spring onion10 g
  • Rice vinegarA splash
  • Olive oil spray6 sprays

    Counted at a quarter of a gram per spray, which is what the nozzle on most bottles delivers. Four sprays is 9 kcal.

Method

  1. Press the tofu between kitchen paper under a plate with a tin on top for ten minutes.

  2. Cut into 2 cm cubes and toss with the cornflour until every side is dusted.

  3. Spray a hot non-stick pan and fry the cubes for about eight minutes, turning, until golden and crisp on every side.

  4. Off the heat, toss with the tamari, sriracha and a splash of vinegar, and scatter the sliced spring onion over.

Worth knowing

  • Pressing is the difference between crisp and rubbery. A wet cube steams in the pan and the cornflour slides off.
  • Firm tofu is 125 kcal per 100 g and 14 g of protein, which makes 22 g here for 230 kcal. Silken tofu will not survive this method.
