Ingredients

  • Egg2 large, about 110 g
  • Edamame beans, shelled80 g

    From frozen, boiled for three minutes. Shelled weight. In the pod, about half of what you weigh is pod.

  • AvocadoHalf an avocado (70 g)

    Flesh only. Half a medium avocado is about 70 g.

  • Cucumber80 g
  • Sesame seeds5 g

    Toasted in a dry pan for a minute until they pop.

  • Tamari2 tsp (10 g)
  • Lime juiceA squeeze
  • Chilli flakesA pinch

Method

  1. Boil the eggs for seven minutes, then cool in cold water and peel. Boil the edamame for three minutes in the same water.

  2. Dice the cucumber and slice the avocado. Arrange with the edamame in a bowl.

  3. Halve the eggs and lay them on top, spoon over the tamari and lime, and finish with the sesame seeds and chilli flakes.

Worth knowing

  • A cold bowl with nothing cooked beyond the eggs and the beans. Edamame is 9 g of the 26 g of protein and brings a lot of chew for 96 kcal.
  • The avocado half is 133 kcal, nearly a third of the bowl. Without it the bowl is around 300 and noticeably less good.
