  • Smoked turkey breast, sliced60 g

    Torn into strips. Deli weight, as sold.

  • Roasted red peppers from a jar, drained80 g

    Patted dry. Straight from the jar they leak brine into the egg.

  • Spinach50 g
  • Light mozzarella30 g
  • Olive oil spray4 sprays

    Counted at a quarter of a gram per spray, which is what the nozzle on most bottles delivers. Four sprays is 9 kcal.

Method

  1. Heat the grill. Spray a small ovenproof pan, wilt the spinach over a medium heat and add the sliced peppers and turkey for a minute to warm through.

  2. Whisk the whites and the egg with oregano and pepper, pour over the filling and cook for three minutes without stirring until the base is set.

  3. Tear the mozzarella over and grill for two minutes until the top is set and the cheese has melted.

Worth knowing

  • Deli turkey and jarred peppers make this a five-ingredient assembly, and 50 g of protein for 338 kcal is what it delivers.
  • Whites set faster than whole eggs and turn springy if overcooked. Two minutes under the grill is plenty; look for set, not brown.
