Ingredients
- Egg white5 whites, about 165 g
- Cooked prawns, peeled100 g
Cooked weight, as sold chilled.
- Pak choi100 g
Stalks sliced, leaves left whole. The stalks need a minute longer.
- Toasted sesame oil1 tsp (4 g)
- Tamari2 tsp (10 g)
- Fresh gingerA small piece, grated
- Garlic1 clove, about 3 g
- Fresh red chilliA few slices, optional
Method
Heat the sesame oil in a non-stick pan over a high heat and stir-fry the pak choi stalks, ginger and garlic for a minute, then the leaves and prawns for a minute more until the leaves wilt.
Turn the heat to medium, pour in the whites beaten with the tamari, and fold slowly until they set in soft white curds, about ninety seconds.
Serve at once with the chilli, if using.
Worth knowing
- The prawns are already cooked, so they only need warming. Any longer and they tighten up.
- 41 g of protein for 230 kcal is the highest protein for the calories in the batch. It is also the one you will want a bowl of rice with, which adds about 160 for 120 g.
