  • Halloumi50 g

    Halloumi is 320 kcal per 100 g and as salty as feta. Fifty grams is four decent cubes and enough.

  • Watermelon150 g

    Flesh only.

  • Lime juiceA squeeze

Method

  1. Cut the halloumi into four cubes and the watermelon into eight cubes of about the same size. Pat the halloumi dry.

  2. Sear the halloumi in a hot dry pan for a minute or two a side, until golden and squeaky. No oil; it has enough fat of its own.

  3. Thread onto two skewers, alternating watermelon and hot halloumi with a mint leaf between each, then squeeze the lime over and grind on pepper. Eat while the cheese is still warm.

Worth knowing

  • Halloumi turns rubbery within about five minutes of leaving the pan, so this is a snack to make and eat rather than to pack.
  • The watermelon should be fridge cold. The contrast with the hot cheese is the whole point.
