  • Black beans, tinned and drained100 g

  • Tomato salsa60 g
  • Feta20 g
  • Pickled jalapeños15 g
  • Fresh corianderA handful
  • Lime juiceA squeeze
  • Ground cuminA pinch, in the beans
  • Olive oil spray3 sprays, about 0.75 g

    Counted at a quarter of a gram per spray, which is what the nozzle on most bottles delivers. Four sprays is 9 kcal.

Method

  1. Warm the beans in a small pan with a splash of water and the cumin, crushing a few against the side.

  2. Toast the tortillas in a dry pan for thirty seconds a side until they blister, and keep them warm under a cloth.

  3. Fry the eggs in a sprayed pan until the whites set and the yolks are still soft.

  4. Spread the beans over the tortillas, set an egg on each, spoon over the salsa, and finish with the feta, jalapeños, coriander and lime.

Worth knowing

  • Corn tortillas at 30 g each are half the weight of a flour one and have a third of the fat. Two of them come to less than a single medium flour tortilla.
  • Feta stands in for the queso fresco the dish usually gets. Twenty grams is enough salt for the plate.
