  • Lean steak200 g

    Weighed raw. Sirloin or fillet trimmed of visible fat. A ribeye at the same weight roughly doubles the fat.

  • Sweet potato220 g
  • Broccoli130 g
  • Skimmed milk30 ml
  • Olive oil spray3 sprays

Method

  1. Boil the sweet potato until soft, drain very well and mash with the milk and plenty of salt.

  2. Cook the steak in a smoking sprayed pan, two to three minutes a side for medium-rare, and rest it for as long as you cooked it.

  3. Steam the broccoli and serve.

Worth knowing

  • Rest it for as long as you cooked it. Cut early and the juice ends up on the plate rather than in the meat.
