Method
Roast or pan-sear the chicken with the olive oil spray until golden and cooked through, then rest it.
Roast the sweet potato until tender at the edges.
Cook the onions and peppers in the same pan until softened and lightly coloured, add the tomato sauce and let it reduce slightly.
Steam the broccoli until just tender.
Plate everything together, scatter the olives over the top and finish with torn basil.
