Method

  1. Get the pan properly hot before anything goes in. That is the whole recipe.

  2. Sear the beef in one layer for a minute a side and take it out.

  3. Stir-fry the vegetables hard for three minutes, return the beef with the soy, toss once and serve over rice.

  • A crowded or cool pan steams. Cook the beef in two batches if your pan is small.
