Ingredients

  • Lean beef, trimmed, sliced thin150 g

    Weighed raw. The same piece weighed after cooking has lost water, so the protein per gram is higher and the total would come out about a quarter over.

  • Cooked egg noodles180 g

    Cooked weight.

  • Broccoli150 g

    Small florets, stalk sliced thin so it cooks at the same rate.

  • Oyster sauce1 tbsp, about 15 g
  • Soy sauce1 tbsp, about 15 g
  • Cornflour1 tsp (5 g)
  • Toasted sesame oil1 tsp, about 4 g
  • Garlic2 cloves, about 6 g
  • Fresh gingerA thumb, cut into matchsticks
  • Water3 tbsp

Method

  1. Toss the sliced beef with the cornflour and half the soy sauce and leave it while you prepare everything else.

  2. Blanch the broccoli in boiling water for two minutes and drain.

  3. Heat a wok until it smokes. Add the sesame oil, then the beef in one layer. Leave it for a minute before stirring so it browns. Add the garlic and ginger for thirty seconds.

  4. Add the broccoli, oyster sauce, the rest of the soy and the water. Toss for a minute until glossy, then add the noodles and toss until they are hot through.

Worth knowing

  • The cornflour coating is what makes the beef silky rather than chewy. It is 18 kcal and worth every one.
  • Takeaway versions of this often run to 800 kcal or more, most of it oil. Here the only fat added is a teaspoon of sesame oil.
