Teriyaki-Style Salmon Tray Bake with Broccoli and Rice

Ingredients
- Salmon fillet150 g
Weighed raw, skin on unless the method says otherwise. Cooked weight is roughly 20% less for the same fillet.
- Broccoli150 g
- Red pepper80 g
- Tamari1 tbsp (15 g)
- Honey1 tsp (7 g)
One teaspoon is enough to make the glaze stick. It is 22 kcal, and doubling it is mostly sugar.
- Toasted sesame oil1 tsp (4 g)
- Garlic1 clove, about 3 g
- Fresh gingerA thumb, grated
- Cooked white rice120 g
Cooked weight. About 50 g of dry rice becomes 130 g cooked.
Method
Heat the oven to 220°C. Toss the broccoli florets and sliced pepper with the sesame oil on a tray and roast for ten minutes.
Stir the tamari, honey, grated garlic and ginger together.
Push the vegetables to the sides, lay the salmon in the middle skin-side down and spoon the glaze over it. Roast for another ten to twelve minutes, until the thickest part of the fish flakes.
Serve over the rice with any glaze from the tray poured on top.
Worth knowing
- Real teriyaki uses mirin and sake. Tamari, honey and ginger get close enough for a Tuesday, and tamari rather than soy keeps gluten out of it.
- The broccoli goes in first because it needs twenty minutes to char at the edges and the salmon only needs ten.
