Method

  1. Drain and rinse the cooked white beans well and put them in a bowl.

  2. Dice the carrot small and cut the yellow pepper into fine strips or cubes, then add both to the beans.

  3. Crush the garlic to a paste with a little salt, whisk it with the lemon juice and olive oil, and pour over the vegetables.

  4. Fold everything together gently so the beans stay whole, then stir through plenty of chopped parsley.

  5. Let it sit for ten minutes before serving so the garlic and lemon soften into the beans.

Worth knowing

  • Fold rather than stir. Beans broken up turn the dressing cloudy and the salad into a mash.
