Method

  1. Spread the yogurt over a plate with the back of a spoon rather than piling it in a bowl, and press a shallow swirl into it.

  2. Halve the tomatoes and dice the cucumber. Season them with salt and pile them onto the yogurt.

  3. Drizzle the oil into the swirl, scatter the za'atar and mint over everything and warm the pitta in a dry pan or the toaster.

Worth knowing

  • Real labneh is yogurt strained overnight through muslin. A thick 0% Greek yogurt gets you most of the way with none of the waiting, and at 20 g of protein in the 200 g it is the reason this counts as a breakfast rather than a dip.
  • Oil is 9 kcal a gram. The teaspoon here is measured, and a pour from the bottle would be three times it.
