  • Lean ham, sliced4 slices (120 g)

    Cooked deli weight, as sold.

  • Egg4 large, about 220 g
  • ChivesA few, snipped
  • Black pepperTo taste
  • Olive oil sprayEnough to grease four holes

    Counted at a quarter of a gram per spray, which is what the nozzle on most bottles delivers. Four sprays is 9 kcal.

Method

  1. Heat the oven to 190°C and spray four holes of a muffin tin.

  2. Press a slice of ham into each hole so it lines the sides like a cup, overlapping where it tears.

  3. Crack an egg into each, season with pepper and bake for twelve to fifteen minutes, until the white is set and the yolk still soft.

  4. Lift out with a spoon, scatter chives over and add hot sauce if you like it.

Worth knowing

  • The ham edges crisp above the egg and the bottom stays soft. Thinly sliced ham tears less than thick.
  • One cup is 110 kcal and 13 g of protein. Two is a reasonable snack after training, and the tray makes four.
