Ingredients
- Chia seeds30 g
- Unsweetened almond milk200 ml
- Whey protein isolate1 scoop, about 30 g
Vanilla, if you have it. Whisk it into the milk before the chia goes in. Values for an unflavoured or lightly flavoured isolate. A concentrate or a blend carries more fat and carbohydrate at the same scoop.
- Blueberries100 g
- Almonds10 g, flaked
Method
Whisk the whey into the almond milk until there are no lumps. A small hand whisk or a jar with a lid and a good shake both work.
Stir in the chia, wait five minutes, stir again, wait five more, stir a third time. Cover and refrigerate overnight.
Add the blueberries and flaked almonds in the morning and loosen with a splash more milk if it has set too firm.
Worth knowing
- Whey in the milk is the difference between a 9 g breakfast and a 33 g one. It also thickens the pudding, so 30 g of chia here gives the texture that 25 g gives without it.
- Unsweetened almond milk is 13 kcal per 100 ml, so the 200 ml is 26 kcal. Sweetened is nearer three times that.
