Ingredients
- Sourdough1 slice, about 50 g
- Cottage cheese150 g
- Tomato100 g
Salted and left to sit so it dresses the cheese rather than wetting the bread.
- ChivesA few, snipped
- Black pepperPlenty
Method
Slice the tomato thickly, salt it and leave it on a plate for five minutes while you toast the bread.
Toast the sourdough until the edges darken. Sourdough goes leathery if it only warms through.
Spoon the cottage cheese over the hot toast, lay the tomato on top and pour over any juice from the plate.
Finish with chives and a lot of black pepper.
Worth knowing
- Cottage cheese does most of the work here. 150 g is 21 g of protein with the bread counted, so toast the slice hard enough to hold up under it.
- A second slice adds roughly the same carbohydrate again. One slice with more cheese keeps the protein up without it.
