  • Turkey breast150 g

    Cut or bashed to about 1 cm thick so it cooks in the time the tomato takes. Weighed raw. The same piece weighed after cooking has lost water, so the protein per gram is higher and the total would come out about a quarter over.

    Tinned, with the sauce.

    Counted at a quarter of a gram per spray, which is what the nozzle on most bottles delivers. Four sprays is 9 kcal.

  • Worcestershire sauce1 tsp, about 5 g

Method

  1. Halve the tomato and put it under a hot grill, cut side up, with the mushrooms alongside, for eight minutes.

  2. Season the turkey and fry it in a sprayed pan over high heat for three minutes a side until the thickest part is no longer pink.

  3. Warm the beans with the Worcestershire sauce.

  4. Plate the turkey with the tomato, mushrooms and beans.

Worth knowing

  • Turkey breast is 1 g of fat per 100 g, the lowest of any meat in the ingredient table, which is how a 150 g steak sits at 293 kcal with the beans.
  • Thin is the point. A thick turkey steak dries out on the outside before the middle is done.
