- Greek yogurt, 5% fat170 g
- Strawberries150 g
- Balsamic glaze1 tsp (7 g)
- Black pepperA few grinds
- Granola25 g
Method
Hull and halve the strawberries, toss them with the balsamic glaze and a few grinds of black pepper and leave them for five minutes. The vinegar pulls juice out of the fruit and makes a syrup.
Spoon the yogurt into a bowl.
Tip the strawberries and their juice over the yogurt and scatter the granola on last.
Worth knowing
- Balsamic glaze is a reduced syrup at 40% sugar, so the teaspoon is 13 kcal. Ordinary balsamic vinegar is thinner and sharper and does the same job at half that.
- British strawberries from June to August. Out of season the fruit is watery and the vinegar has nothing to work on.
