Spread like cream cheese, at a small fraction of the fat.

Cooked deli weight, as sold.
- Gherkins40 g
- Radishes40 g
- Fresh dillA few fronds
- Black pepperTo taste

Method
Spread the quark over both slices of rye, right to the edge. Season it with pepper and a little salt; quark is bland on its own.
Fold the ham on top. Slice the gherkins lengthways and the radishes into thin rounds and scatter them over.
Finish with the dill and eat with a knife and fork.
Worth knowing
- Quark is 12 g of protein per 100 g with almost no fat. Spread it thickly.
- The gherkins are doing the work of a dressing. Sweet pickled cucumbers are a different jar with a lot more sugar in the liquid.
