Ingredients
- Strawberries150 g
- Greek yogurt, 5% fat120 g
- Balsamic vinegar1 tsp (5 g)
- HoneyA small teaspoon (5 g)
- Black pepperA grind
Method
Heat the oven to 200°C. Hull the strawberries and halve any large ones, then toss them in a small ovenproof dish with the balsamic, honey and a grind of pepper.
Roast for fifteen minutes until the berries have softened and the juices have turned thick and dark. Give the dish a shake halfway.
Spoon the yogurt into a bowl and pour the strawberries and syrup over while warm, or chill them and do it later.
Worth knowing
- Roasting is the trick for strawberries that are out of season and taste of water. Fifteen minutes turns them into something worth eating.
- Balsamic vinegar and not glaze here, because the oven does the reducing. The glaze would burn.
