  • Greek yogurt, 0% fat400 g
  • Strawberries150 g
  • Pistachios, shelled20 g

  • Vanilla extractA few drops

Method

  1. Line a baking tray with baking paper. Stir the honey and vanilla through the yogurt, then spread it over the paper with the back of a spoon to about half a centimetre thick. Thinner freezes faster and snaps better.

  2. Slice the strawberries and press them into the yogurt cut side down. Chop the pistachios and chocolate and scatter both over.

  3. Freeze flat for at least three hours until solid, then lift the paper, break the sheet into rough shards and store them in a bag in the freezer. A quarter of the sheet is one serving.

Worth knowing

  • Makes four servings. Split the finished shards into four piles by eye or weigh the whole sheet and divide, which is more honest.
  • 0% yogurt freezes hard and icy; the 5% version at the same weight freezes creamier and adds about 40 kcal a serving. Both are worth making once to see which you prefer.
