Ingredients
- Rump steak, fat trimmed110 g
Weighed raw. The same piece weighed after cooking has lost water, so the protein per gram is higher and the total would come out about a quarter over.
- Egg2 large, about 110 g
- Spinach120 g
- Cherry tomatoes100 g
Halved so they collapse in the pan.
- Olive oil spray4 sprays
Counted at a quarter of a gram per spray, which is what the nozzle on most bottles delivers. Four sprays is 9 kcal.

Method
Sear the salted steak in a hot dry pan for three minutes a side, then set it aside to rest.
Spray the pan, add the tomatoes cut side down and let them blister for two minutes. Add the sliced garlic and the spinach and turn it through until it wilts. Tip onto the plate.
Spray the pan again and fry the eggs until the whites are set and the edges catch. Slice the steak and serve everything together with a lot of black pepper.
Worth knowing
- The eggs are about 160 kcal of the total and 14 g of the 43 g of protein. The steak is small on purpose; make it 170 g and the plate is 75 kcal more.
- The whole dinner is 7 g of carbohydrate. Add 150 g of cooked rice for another 195 kcal if you want it to be more of a meal.
