Ingredients
- Buckwheat flour60 g
- Egg1 large (55 g)
- Semi-skimmed milk100 ml
- Baking powderHalf a teaspoon
- Apple1 medium, about 160 g
- Ground cinnamonHalf a teaspoon
- Greek yogurt, 0% fat100 g
- Maple syrup1 tsp, about 7 g
- Coconut oil1 tsp, about 4 g
Method
Whisk the flour, baking powder, egg and milk to a smooth batter and let it stand for ten minutes.
Dice the apple, skin on, and cook it in a dry pan with the cinnamon and a splash of water for five minutes until soft at the edges.
Cook the pancakes in the coconut oil over medium heat, about two minutes a side, until the surface is dry and the underside is dark.
Stack with the yogurt, the apple and the maple syrup.
Worth knowing
- Buckwheat is not wheat despite the name, and the pancakes are gluten-free if the flour is milled somewhere that keeps it that way. Check the bag.
- Rest the batter. Buckwheat drinks up the milk slowly and an unrested batter makes pancakes that crack.
