  • Rolled oats50 g

    Dry weight.

  • Banana1 medium, about 100 g

    Very ripe. Brown spots are the sweetness. Peeled weight. A medium banana is about 100 g without the skin.

  • Egg1 large, about 55 g
  • Whole milk100 ml
  • Walnuts15 g, broken up
  • Ground cinnamonHalf a teaspoon
  • Baking powderHalf a teaspoon
  • SaltA pinch

Method

  1. Mash the banana in a large mug with a fork, then beat in the egg and the milk.

  2. Stir in the oats, cinnamon, baking powder, salt and most of the walnuts. Scatter the rest on top.

  3. Microwave at 800 W for two and a half minutes, until it has risen and the top is set. Stand for a minute before eating from the mug or turning it out.

Worth knowing

  • It rises to the rim and sinks back, which is normal. If the centre is still wet after two and a half minutes, give it another thirty seconds rather than another minute.
  • Most of the calories are banana, egg and walnut rather than oats. Leave the walnuts out and it drops by about 100 kcal.
