Ingredients
- Rolled oats45 g
Dry weight.
- Egg1 large, about 55 g
- Banana80 g, mashed
Peeled weight. A medium banana is about 100 g without the skin.
- Whey protein isolate1 scoop, about 30 g
Values for an unflavoured or lightly flavoured isolate. A concentrate or a blend carries more fat and carbohydrate at the same scoop.
- Semi-skimmed milk60 ml
- Blueberries80 g
- Baking powderHalf a teaspoon
- SaltA pinch
Method
Heat the oven to 180°C. Mash the banana in a bowl and beat in the egg and the milk.
Stir in the oats, whey, baking powder, salt and most of the blueberries.
Scrape into a small ovenproof dish about 12 cm across, press the last blueberries into the top and bake for 20 minutes until risen and the top springs back.
Leave for five minutes before eating. It firms up as it cools.
Worth knowing
- The whey is in the batter here rather than stirred in after, and baking it is fine. It makes the texture closer to cake than porridge, which is the point of baked oats.
- A ramekin is too small. A 12 cm dish or a small loaf tin gives it room to rise without setting solid.
