Allergens

- Oats count as a gluten cereal under UK labelling and ordinary oats are milled alongside wheat. Certified gluten-free oats are a separate ingredient here.
- Most whey powders contain soya lecithin, which counts as soya. Check the tub.
Flags follow UK labelling rules and come from the ingredients as listed, not from any particular brand. Check the packet before cooking for somebody with an allergy.
Ingredients
- Rolled oats40 g
Dry weight.
- Whey protein isolate1 scoop, about 30 g
Values for an unflavoured or lightly flavoured isolate. A concentrate or a blend carries more fat and carbohydrate at the same scoop.
- Cocoa powder2 tsp (6 g)
- Egg1 large (55 g)
- Skimmed milk80 ml
- Baking powderHalf a teaspoon
- Vanilla extractA few drops
- Raspberries100 g
- Skyr100 g
- Olive oil spray3 sprays, about 0.75 g
Counted at a quarter of a gram per spray, which is what the nozzle on most bottles delivers. Four sprays is 9 kcal.
Method
Blend the oats, whey, cocoa, egg, milk, vanilla and baking powder until smooth. The batter should drop off a spoon slowly.
Cook small pancakes in a sprayed pan over medium-low heat for two minutes a side. Cocoa batter shows no colour change, so go by the dry edges.
Stack with the skyr and pile the raspberries over, crushing a few.
Worth knowing
- Unsweetened cocoa and unflavoured whey make a bitter pancake. Chocolate-flavoured whey is the usual fix, and the raspberries and skyr do the rest.
- The batter thickens as it stands. If it goes past pourable, a splash more milk brings it back and changes nothing on the numbers worth noticing.
