Apple and Pecan Baked Oats with Egg, for Two

- Rolled oats100 g
Dry weight.
- Apple2 medium, cored and diced (320 g)
- Egg2 large, about 110 g
- Skimmed milk150 ml
- Raisins20 g
- Honey2 tsp (14 g)
- Pecans24 g, roughly broken
- Ground cinnamon1 tsp
- Baking powder1 tsp (4 g)
- SaltA pinch
Method
Heat the oven to 180°C. Beat the eggs with the milk and honey.
Stir in the oats, cinnamon, baking powder, salt, raisins and most of the apple.
Scrape into a 20 cm ovenproof dish, scatter the rest of the apple and the pecans over the top and bake for 30 minutes until set in the middle and brown at the edges.
Cool for ten minutes, then cut in two.
Worth knowing
- Makes two. The second half keeps three days in the fridge and is good cold, or back in the microwave for a minute.
- The pecans are the fat. At 690 kcal per 100 g they are about 83 kcal a serving here, so weigh them rather than scattering a handful.
