  • Espresso1 shot (30 ml), cooled
  • Medjool dates2 dates, about 40 g

    Chopped small so they spread through the pudding rather than sitting as two lumps. Stoned weight.

  • Pea protein powderHalf a scoop (15 g)
  • Dark chocolate, 85%2 squares (10 g), grated

Method

  1. Whisk the pea protein into the soya milk and cooled espresso until smooth.

  2. Stir in the chia and chopped dates, stir twice more over ten minutes, then cover and refrigerate overnight.

  3. Grate the chocolate over the top just before eating.

Worth knowing

  • Two dates are 112 kcal and all the sweetness in the jar. One date and a few drops of vanilla is the version for a lighter morning.
  • Instant coffee dissolved in 30 ml of hot water does the same job. Cool it before it goes near the milk.
