Apple and Cinnamon Chia Pudding with Pea Protein

Ingredients

  • Chia seeds25 g
  • Oat milk200 ml
  • Pea protein powder1 scoop, about 30 g

    Vanilla pea protein if you have it. Unflavoured is earthy and needs the cinnamon to do more work.

  • Apple120 g, about a small one

    Diced and cooked down with the cinnamon.

  • Ground cinnamonHalf a teaspoon
  • Pumpkin seeds10 g

Method

  1. Dice the apple, skin on, and cook it in a small pan with the cinnamon and two tablespoons of water for six to eight minutes, until soft and the water has gone. Leave to cool.

  2. Whisk the pea protein into the oat milk until smooth, stir in the chia and stir twice more over ten minutes. Cover and refrigerate overnight along with the apple.

  3. In the morning spoon the apple over the pudding and top with the pumpkin seeds, toasted for two minutes in a dry pan if you have the time.

Worth knowing

  • Pea protein is what gets a plant-based chia pudding to 32 g. Without it the same jar is about 10 g, which is a seed pudding with fruit on it.
  • Oat milk is the sweetest of the plant milks at 6.5 g of carbohydrate per 100 ml and carries a gluten flag. Soya is lower in both and works the same way.
