- Coconut yogurt150 g
- Pea protein powderA third of a scoop (10 g)
- Granola25 g
- Blueberries80 g
- Pumpkin seeds10 g
- Lemon zestZest of half a lemon
Method
Toast the pumpkin seeds in a dry pan for two minutes until they start to pop.
Stir the lemon zest and the pea protein into the coconut yogurt until smooth.
Spoon into a bowl and add the blueberries, granola and seeds.
Worth knowing
- Lemon zest against coconut is the whole point. The zest is where the flavour lives and adds nothing to the numbers, so use a fine grater and take only the yellow.
- Ten grams of pea protein takes the bowl from about 8 g of protein to 15. If you would rather not use powder, 20 g of hemp seeds does most of the same job and adds about 110 kcal.
