- Coconut yogurt150 g
- Pineapple80 g

- Pea protein powderHalf a scoop (15 g)
- Desiccated coconut8 g
- Cashews15 g
- Lime juiceA squeeze
Method
Stir the chia and pea protein into the coconut yogurt and leave it for ten minutes. The chia swells and the yogurt sets a little thicker.
Toast the coconut and cashews together in a dry pan for two to three minutes, stirring, until the coconut is golden. Tip out at once.
Dice the fruit, squeeze the lime over it and pile it onto the yogurt with the toasted coconut and cashews.
Worth knowing
- Coconut three ways is a lot of fat: the yogurt is 14%, the desiccated coconut 65%, and with the cashews the bowl has 39 g. It eats like a pudding, which is the reason to make it.
- The chia is doing two things. It thickens the yogurt, and it adds about 2.5 g of protein to a bowl that has few other sources besides the powder.
