Mango and Coconut Chia Pudding
Chia set overnight in soya milk with vanilla, topped with mango, lime and hemp seeds. No dairy and no nuts. 15 g of protein for 315 kcal.

Ingredients
- Chia seeds25 g
- Unsweetened soya milk200 ml
Unsweetened soya is the plant milk with protein in it, 3.3 g per 100 ml. Almond has almost none.
- Mango80 g
Flesh only.
- Hemp seeds, hulled10 g
- Desiccated coconut5 g
- Lime juiceA squeeze
- Vanilla extractA few drops
Method
Stir the chia seeds into the soya milk with the vanilla in a jar or bowl. Stir again after five minutes, and once more after ten, or the seeds sink and set as a solid layer at the bottom.
Cover and leave in the fridge overnight. It should be the texture of a loose rice pudding by morning.
Dice the mango, squeeze the lime over it and spoon it onto the pudding with the hemp seeds and coconut.
Worth knowing
- Chia is 31% fat and 17% protein, so 25 g of seed is 112 kcal. It looks like nothing in the jar and quadruples in the milk.
- The second and third stir are the difference between a pudding and a puck. Set a timer.
