Ingredients
- Cottage cheese200 g
- Pineapple120 g
Fresh, cut into chunks. Tinned in juice is fine once drained and adds about 10 kcal. Flesh only.
- Desiccated coconut10 g
- Lime juiceA squeeze
- Fresh mintA few leaves, torn
Method
Toast the coconut in a dry pan over medium heat for about two minutes, stirring constantly. It goes from white to golden to burnt in the space of thirty seconds, so do not walk away.
Cut the pineapple into rough chunks, squeeze the lime over it and leave it for a minute.
Spoon the cottage cheese into a bowl, tip the pineapple and its juice over and scatter the coconut and mint on top.
Worth knowing
- Desiccated coconut is 6.6 kcal a gram, which puts the 10 g here in the same territory as a small handful of nuts. Ten grams toasted covers the bowl. Twenty would be a mistake you notice.
