Ingredients

  • Coconut milk drink250 ml

    The carton drink at 33 kcal per 100 ml, not tinned coconut milk. Tinned is roughly five times the calories.

  • Pea protein powder1 scoop, about 30 g
  • Pineapple150 g

    Frozen chunks give the thickness. Fresh needs a handful of ice. Flesh only.

  • BananaHalf a medium (50 g)

    Peeled weight. A medium banana is about 100 g without the skin.

  • Lime juiceJuice of half a lime
  • IceA handful, if using fresh pineapple

Method

  1. Pour the coconut drink into the blender and whisk the pea protein into it by running the blender for ten seconds.

  2. Add the pineapple, banana and lime and blend for thirty seconds until smooth.

  3. Add ice if it needs it and blend again briefly. It should be pale yellow and thick enough to hold a straw.

Worth knowing

  • Coconut milk drink from a carton is 33 kcal per 100 ml. Tinned coconut milk is five times that and would turn this into a 700 kcal glass, so check which one you are pouring.
  • Vanilla pea protein works better than unflavoured with fruit this sweet. Unflavoured is fine, but the lime has to work harder.
