Ingredients
- Egg2 large, about 110 g
- Greek yogurt, 0% fat40 g
- Curry powderHalf a teaspoon
- Raisins8 g
- Spring onion10 g
- Lemon juiceA squeeze
- SaltA pinch
Method
Boil the eggs for nine minutes, cool them in cold water and peel, then cut each into quarters.
Stir the curry powder, lemon and salt into the yogurt and taste it. It should be sharper than you think it needs, because the egg will soften it.
Fold in the eggs, raisins and sliced spring onion and pack into a pot. It is better after an hour in the fridge.
Worth knowing
- The classic coronation sauce is mayonnaise and mango chutney. Yogurt and a few raisins get most of the way there for a fraction of the calories.
- Eight grams of raisins is about a tablespoon and 24 kcal. They are the sweetness the curry powder needs; more than that and it starts to taste like a pudding.
