  • Egg1 large (55 g)
  • Egg white1 white, about 33 g
  • Skimmed milk30 ml
  • Ground cinnamonA pinch

  • Maple syrup1 tsp, about 7 g
  • Olive oil spray4 sprays, about 1 g

Method

  1. Whisk the egg, egg white, milk and cinnamon in a shallow dish.

  2. Dip the bread for twenty seconds a side. Gluten-free bread is drier than wheat bread and soaks fast.

  3. Fry in a sprayed pan over medium heat for two to three minutes a side until browned.

  4. Top with the skyr, sliced strawberries and the syrup.

Worth knowing

  • Gluten-free bread crisps better than it toasts, so it makes surprisingly good French toast. It also browns fast, so keep the heat at medium and watch it.
  • Skyr is the protein here. The bread is 4 g per 100 g against 9.5 g for wholemeal, so without the skyr this is a low-protein plate.
