Ingredients
- Greek yogurt, 0% fat170 g
- Apple100 g
Grated with the skin on. Peeling loses the colour and gains nothing.
- Ground flaxseed10 g
- Ground cinnamonHalf a teaspoon
- Lemon juiceA squeeze
Method
Grate the apple on the coarse side of a box grater straight into a bowl, turning it to leave the core behind. Squeeze the lemon over at once so it does not brown.
Stir the flaxseed and cinnamon through the yogurt, then fold the apple in with any juice on the board.
Leave it five minutes before eating. The flax swells and the whole thing thickens.
Worth knowing
- Ground flaxseed is 50 kcal for the 10 g here and thickens a yogurt pot the way chia does, for about half the price.
- Left overnight in the fridge this becomes a soft, set pot. It is better the next day, if anything.
