Ingredients
- Oatcakes2 oatcakes, about 20 g
- Light cream cheese40 g
- Apple80 g
Half a medium apple. Cut the slices thin enough to bend or they slide off.
- Ground cinnamonA good pinch
- HoneyA small teaspoon (5 g)
Method
Cut the apple into quarters, core it and slice each quarter as thinly as the knife allows.
Spread the cream cheese over both oatcakes and shingle the apple slices across the top, overlapping like roof tiles.
Dust with cinnamon from a height so it lands evenly, then drizzle the honey over.
Worth knowing
- Oatcakes are 44 kcal each and hold up under cream cheese far longer than a rice cake would, so these can be built in the morning and eaten mid-afternoon.
- A sharp apple is better than a sweet one against the cream cheese. Bramley slices are too sour; a russet or a Braeburn is about right.
