  • Halloumi50 g
  • Olives, pitted6 olives, about 24 g
  • Cherry tomatoes80 g
  • Olive oil spray3 sprays

Method

  1. Soak two wooden skewers in water for ten minutes, or use metal ones. Heat the grill to high.

  2. Cut the halloumi into 1.5 cm cubes and thread it onto the skewers alternately with the olives and tomatoes.

  3. Spray, scatter with oregano and grill for three minutes a side, until the halloumi is golden and the tomatoes blister.

  4. Squeeze lemon over and eat hot.

Worth knowing

  • Halloumi is 320 kcal per 100 g, so 50 g is the portion and two skewers is what it makes. It stays chewy once cool and eats well cold from a tub.
  • Unsoaked wooden skewers scorch under the grill within a minute.
