Ingredients
- Edamame beans, shelled100 g
Shelled weight. In the pod, about half of what you weigh is pod.
- Fresh mintA few leaves, chopped
- Lemon juiceA squeeze
- Olive oil1 tsp (5 g)
- Corn cakes2 cakes, about 18 g
- Feta15 g
- Black pepperTo taste
- SaltA pinch
Method
Boil the edamame for four minutes so it is soft enough to crush, then drain.
Crush with a fork or a potato masher with the oil, lemon, mint and salt. Keep it rough.
Pile onto the corn cakes, crumble the feta over and add pepper.
Worth knowing
- Crushed, not puréed. A blender makes it into baby food; a fork leaves it as a topping.
- Fifteen grams of feta is a small amount and is doing a lot. Forty would nearly double the fat on the plate.
