Ingredients
- Edamame beans, shelled100 g
Shelled weight. In the pod, about half of what you weigh is pod.
- Olive oil1 tsp (4 g)
- Rice cakes2 cakes, about 18 g
- Lemon juiceA good squeeze
- Fresh mintA few leaves
- Chilli flakesA pinch
- SaltA pinch
Method
Boil the beans for four minutes until tender, then drain them well.
Crush them with a fork, or pulse briefly, with the oil, lemon, mint and salt into a rough paste that still has whole beans in it.
Pile onto the rice cakes and finish with the chilli flakes.
Worth knowing
- Smashed rather than blended, so it stays a topping instead of a dip and holds on the rice cake.
- Peas work in place of edamame, with about half the protein.
