Ingredients
- Banana150 g (1 large)
Peeled weight. A medium banana is about 100 g without the skin.
- Rolled oats90 g
Dry weight.
- Peanut butter40 g (a scant 3 tbsp)
The kind that is peanuts and salt. Sweetened spreads carry more carbohydrate.
- Dark chocolate, 85%3 squares, about 15 g
Chopped small so a bit ends up in every cookie.
- SaltA pinch
Method
Heat the oven to 180°C and line a tray with baking paper.
Mash the banana and beat in the peanut butter until smooth, then stir in the oats, chopped chocolate and salt.
Shape into six flattened rounds on the tray and bake for fourteen minutes until golden at the edges.
Leave on the tray for five minutes before moving. They are soft when they come out and set as they cool.
Worth knowing
- The peanut butter is most of the fat and the reason these hold together better than the banana-only cookie. Chocolate is a small share of the total; the oats and banana are the bulk.
- Crunchy peanut butter gives a better texture here than smooth. The numbers are the same either way.
