Ingredients

  • Banana1 medium, about 100 g

    Peeled weight. A medium banana is about 100 g without the skin.

  • Peanut butter10 g

    The kind that is peanuts and salt. Sweetened spreads carry more carbohydrate.

  • Dark chocolate, 85%2 squares, about 10 g

    Two squares is 10 g and only just enough to dip. Four squares doubles the chocolate and adds 60 kcal.

Method

  1. Slice the banana into coins about a centimetre thick. Spread half of them with a thin smear of peanut butter and press the other half on top to make small sandwiches.

  2. Melt the chocolate in a small bowl over a pan of barely simmering water, or in short bursts in the microwave, stirring between them.

  3. Dip the top of each sandwich into the chocolate, set them on a plate lined with baking paper, add a flake or two of salt and freeze for at least two hours.

Worth knowing

  • A slightly underripe banana holds its shape better once frozen. A spotty one turns to mush when it thaws on the plate.
  • The whole batch is one serving here. The bites keep a week in a box in the freezer if you want to make two bananas' worth and count half.
