Ingredients
- Oatcakes1 oatcake, about 10 g
- Quark150 g
- Blueberries80 g
- Lemon zestZest of half a lemon
- Lemon juiceA squeeze
- Granulated sweetenerTo taste
- Vanilla extractA few drops
Method
Crush the oatcake in your fist over a small glass so the crumbs make a rough base.
Beat the quark hard with the lemon zest, a squeeze of juice, vanilla and sweetener for a full minute until it turns smooth and glossy. Spoon it over the crumbs without mixing them in.
Crush a quarter of the blueberries with a fork, spoon them over the quark and top with the whole ones.
Worth knowing
- Quark is the closest thing to cheesecake filling at 65 kcal per 100 g. Cream cheese, the traditional filling, is more than double that.
- One oatcake is enough base for a glass. Two makes it a biscuit with yogurt on it.
