Method

  1. Boil the potatoes until tender, drain and crush them roughly with a fork rather than mashing.

  2. Roast the salmon with lemon slices for twelve to fourteen minutes at 200°C, until it just parts when pressed.

  3. Blanch the asparagus for two minutes and serve everything together.

Worth knowing

  • Crushed rather than mashed keeps the edges, which crisp if you press them into a hot sprayed pan for a minute.
